      1. Potato starch is excellent for soft bread I seem to recall. I am recalling that from my father’s stories of breadmaking in his parents’ bakery/tea rooms.

  1. Facinatin’ indeed. I wonder if you could do a time lapse series that follows the tater-skins all the way down to compost which is used to feed new spuds?
